White Cake Search: First Contestant

I want a white vegan cake for my birthday in the fall so I've decided to try out some of the recipes online. The first white cake was made as a late Mother's Day cake for me. I filled it with raspberry jam and covered it with half of the chocolate frosting recipe. I found it better the next day but only gave it 3/5, though my son gave it a 4.

as for ice cream with no ice cream maker, I first put the fruit syrup in a metal pot, then I left it in the fridge to get cold (apparently putting it in the fridge first makes for smaller ice crystals). Then I moved it to the freezer and waited for it to harden up around the edges, then whisked it up like crazy to break up the crystals. And I went back over and over again until it was kind of the right consistency, and THEN I put an immersion blender in it and whipped it super smooth, put it back in the freezer to harden up again, and then it was done! whew!

it's actually so much simpler than I described it there, basically just churn it by hand over the course of a day or two. I thought it was really fun, actually, I kept checking on it too often! and it totally works. :)
